Given my limited cranial capabilities, I’m thinking perhaps that Endives au Jambon can handle a red, white or even a rosé wine. Call me a lunatic, that’s fine. I may have the wine gods turning over in their graves (it’s not only my Grandmother who does that) but because it’s a flexible dish where we have ham and endives combined with a white cream sauce, I feel we can “stretch.”

By the way if you like the NZ-style Sauvignon Blanc (a style that not everyone embraces) which tends to have some real pronounced citrusy flavors that jolts your taste buds, then you owe it to yourself to hunt down this wine. I personally feel there is nothing better than a chilled Sauvignon on days when its 90 degrees in the shade and the humidity is a cool 100 degrees. Readers from the South or the Mid Atlantic will recognize those days. But let me add one point, the Californie Napa Valley, Sauvignon (Fumé blanc) is equally as delicious and fresh tasting but each person has their favorites.

Last but not least, if you want to do a good deed (to yourself) why not enjoy a vintage Champagne? Remember, you don’t need a major event in your life to drink Champagne!! I am going to continually beat that drum, repeat that lesson until we are all nodding our heads in the affirmative. Oui Monsieur le Professeur… I am on a mission. Champagne can be enjoyed anytime (of the day) and just about anywhere…after all we are talking about the French and their Champagne. But it’s OK to wait until you can celebrate grandma’s 100th birthday, junior finally-finally graduating or Uncle Tom getting out of the Big House.
