As for the wine, that most loyal (next to one’s dog) of foodie companions, I was pleasantly derailed in my hunt for a Loire-type wine with the arrival of my son and daughter-in-law who ushered in a 2006 Lussac Saint-Émilion, Clos les Haut Martin. What a welcomed surprise I assure you and it paired well with the meal; I would do that again in a heartbeat, in a New York minute – whatever!
In conclusion, Operation Volaille au Vinaigre was a complete success.
