Cotes de porc a la creme de moutarde au poivre vert / Sautéed Pork Chops in Green Peppercorn Mustard Sauce
Ingredients:
(serves 4)
4 nice size pork chops
Flour
1 tbl of olive oil
1 oz of butter
2 large shallots
1 glass of dry white wine
4 tbl of crème fraiche
1 egg yoke
1 tsp of lemon juice
2 tbl of green peppercorn mustard
Salt and pepper
Directions:
Salt and pepper and add a dusting of flour on each side of the chops then brown them in a pan with the oil and melted butter.
Once the chops are nicely brown on each side add in the chopped shallots and the white wine. Bring to a boil then cover and cook at medium temperature for 15 minutes. Test the white wine to ensure its integrity.
Once the chops are cooked, set them aside on a warm plate or pop them in a heated over. Don’t dry them out, please.
Return the pan to the heat and scrape the bottom with a wooden spoon to get all those delicious bits waiting for you. Add in the crème fraîche letting it thicken all the while stirring like a mad man.
In a little bowl, gently beat the egg yolk adding the lemon juice and mustard. Incorporate the ingredients, thoroughly mixed, into the warm crème, bit by bit. Check the seasoning and add as needed. Add a spoonful of the sauce on top of each chop, place on a platter with the rest of the sauce.
Serving suggestions: I would present this with red new potatoes on the side, a basket of crusty baguette slices and a pichet vin maison. Alternatively, spoil yourself with plateful of frites.
Now about those wines…
You are lucky because was a wine tasting (I know, hard to believe) and the wines were Beaujolais which are some of my favorites. I grew up in a family that favored Beaujolais, Cotes-du-Rhone, Nuit-St.George or St.Emilion with lunch and dinner. It was just like that.
