We find ourselves once again back in Andalusia facing that moment of truth: What wine to serve. An old rule of thumb which has, interestingly enough, broad applicability is to “go local” and in this case we’re talking wine. If you are anywhere near your friendly supermercado definitely check out the local grape as you’re going to find a nice bottle for a few Euros. The pork roast dish is going to be a bit spicy on account of the Spanish paprika and by the way, you ought to add a bit of cayenne pepper for that special flavor that leaves you dripping. Oh how wonderful. There are a number of excellent wines that pair up quite nicely; nothing too meek because it risks being overpowered by the spice. However, I am recommending a few whites and some robust reds as well. All come from a couple of choice spots around the world. You decide but be daring. Amaze your guests!

Californie – Central Coast, 2006 Monterey Vineyards Pinot Noir. If you like California Pinots this one is affordable and good. When price and taste go hand in hand then you have a strong buy.
