The wine selection for this dish does a little hop, skip and jump between continents. So for purposes of geography I have selected a few wines from the Western part of these United States – notably California and Washington State, its neighbor to the north. Over to la Belle France a few selections from the Burgundy, Loire and Provence area. All in all, these are supper selections because quite simply they are super wines.  
Les Vins de Sélection
California, J. Lohr Arroyo Vista Vineyard 2006 Chardonnay is dry with enough acidity to keep your palate clean and crisp; this is a full bodied wine with strong lemon flavors and pear under tones. The wine is perfectly balanced with the fermentation in French Oak barrels coming through in the color of the wine without over powering the taste.
Washington State, L’Ecole No.41 2008 Chardonnay from the Columbia Valley is barrel fermented in the traditional Burgundian style so as to maintain a good balance. You will find this wine has robust natural acidity, tropical flavors with a hint of minerality giving it both complexity and balance. I think the residents of this find state have much to boast about with their wines. Seek this puppy out you will be glad you did!  If you are looking for a French version it might well be a Chablis from Bourgogne. Contrast and compare if you dare!  

California Merlot, Wild Horse Paso Robles 2005 This is a deep purple wine that opens up to a full body with flavors of black cherry, plum, and vanilla with a smooth finish.

Vallée du Rhône, Châteauneuf du Pape which is probably not a suprising choice how could one ignore the papal edict to go forth and drink this wine by the cask?
 
Provence, Coteaux d’Aix en Provence,  2009 Chateaux de Fonscolombe Rosé. The Appellation des Coteaux d’Aix-en-Provence area is in the western part of Provence’s limestone stretches. This selection is a light-medium bodied, dry, Rose, Grenache/Garnacha varietal.
 
Val de Loire, Coteaux de Saumur – We forget that the Loire Valley (Val de Loire), is France’s third most important winemaking region. I have introduced, sporadically, one or two wines from the region but will continue to do so. My oh my do they have some pretty ones in this region – wines I’m talking about.  The grape varietal for the Saumur is Chenin Blanc (Pineau de la Loire) The wine has intense yellow with glints of green, turning to antique gold with hints of amber. The nose is subtle and aromatic with exotic aromas. A difficult wine to pass up. A region impossible to ignore.
